Is this a main dish or side?
It works beautifully as both! Pair it with grilled chicken, pork, or ham as a flavorful side, or serve with a salad for a light yet satisfying lunch.
Ingredients
-
1½ cups buttery crackers, crushed (Ritz or similar)
-
6 tbsp butter, divided
-
2 cups sweet onions, thinly sliced (Vidalia recommended)
-
2 cloves garlic, minced
-
1 tbsp fresh chives, chopped
-
¾ cup whole milk
-
2 eggs
-
½ tsp salt (adjust to taste)
-
¾ cup shredded sharp cheddar cheese
-
Pinch of paprika
-
1 tbsp fresh parsley, chopped (optional garnish)
Directions
Step 1: Make the crust
Preheat your oven to 350°F (175°C). Combine crushed crackers with 4 tbsp softened butter. Press the mixture evenly into the bottom and sides of an 8-inch pie dish. Chill in the fridge while you prepare the filling.
Step 2: Cook the onions
Melt the remaining 2 tbsp butter in a skillet over medium heat. Add the onions and garlic, cooking gently for about 12 minutes until soft and golden.
Step 3: Assemble the pie
Spread the caramelized onions evenly over the chilled crust. In a bowl, whisk together eggs, milk, salt, and chives. Pour this custard mixture over the onions. Top with shredded cheddar and sprinkle with paprika.
Step 4: Bake
Bake for 35 minutes, or until the filling is set and a knife inserted comes out clean. Let the pie cool slightly, then garnish with parsley before serving.
