  • 90 g (6 tbsp) sugar

  • Juice of 1 lemon

  • 10 g (1 tbsp) cornstarch

For the Sponge Cake

  • 5 large eggs

  • 130 g (1/2 cup + 2 tbsp) sugar

  • A pinch of salt

  • 170 g (1 cup) all-purpose flour

  • 50 g (1/5 cup) milk

For the Cream Cheese Frosting

  • 200 g (1 cup) heavy cream (33% fat)

  • 300 g (1.3 cups) cream cheese

  • 50 g (1/4 cup) sugar

Topping

  • 50 g roasted flaked almonds

Step 1: Caramelize the Apples

  1. Prepare the apples: Peel and chop into small pieces.

  2. Cook: Heat sugar and lemon juice in a pan over medium heat until the mixture begins to caramelize.

  3. Add apples: Stir in chopped apples and cook for 5–7 minutes until tender.

  4. Thicken: Mix cornstarch with a splash of water to create a slurry. Add to the apples and cook until thickened.
