Preheat the Oven
Heat your oven to 350°F (175°C). Grease a 9×13-inch pan or line it with parchment paper for easy removal. -
Mix Dry Ingredients
In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt until fully combined. -
Combine Wet Ingredients
In another bowl, lightly beat the eggs. Add vegetable oil (or melted butter) and vanilla extract, mixing until smooth. -
Make the Batter
Pour the wet mixture into the dry ingredients and gently stir just until combined. The batter will be thick—that’s normal! Fold in the diced apples evenly. If using nuts, add them now or sprinkle on top once the batter is in the pan. -
Bake
Spread the batter evenly in your prepared pan. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. -
Cool and Serve
Let the cake cool in the pan on a wire rack for about 10 minutes. If you used parchment paper, lift the cake out carefully and let it cool completely on the rack. Dust with powdered sugar before serving. For an extra special touch, serve with whipped cream or a scoop of vanilla ice cream.
