Ultimate Ginger Molasses Cake with Cinnamon Molasses Frosting

Ingredients

For the Cake:

  • 1½ cups all-purpose flour

  • 9 oz milk

  • ½ cup cold, cubed butter

  • ½ cup molasses

  • ½ cup corn syrup

  • ½ cup packed brown sugar

  • 1 large egg

  • 1 tsp baking soda

  • 1 tbsp ground ginger

  • 1 tsp cinnamon

  • 1 tsp pumpkin pie spice

For the Cinnamon Molasses Frosting:

  • 1½ cups powdered sugar

  • 4 oz cream cheese

  • ¼ cup softened butter

  • 3 tsp molasses

  • ½ tsp vanilla extract

  • ¼ tsp cinnamon

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Grease a 5×9-inch baking pan and line it with parchment paper.

  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, and pumpkin pie spice.

  3. Heat Liquids: In a small saucepan, warm the milk and brown sugar until the sugar dissolves and the mixture is lukewarm. In a separate pan, gently heat the molasses and corn syrup until lukewarm.

  4. Combine Butter and Flour: Cut the cold butter into small pieces and mix it into the flour mixture until crumbly.
