Garlic Butter Steak Bites & Creamy Parmesan Shells

🍳 Instructions

1. Cook the Pasta

  • Bring a pot of salted water to a boil and cook pasta until al dente.

  • Reserve 1/4 to 1/2 cup of pasta water, then drain and set aside.

2. Sear the Steak

  • Pat steak dry and season with salt and pepper.

  • Heat 1 Tbsp olive oil and 1 Tbsp butter in a large skillet over high heat.

  • Add steak in a single layer (cook in batches if needed).

  • Sear for 2–3 minutes per side for medium-rare. Remove and set aside.

3. Make the Garlic Herb Butter

  • Lower heat to medium. Melt the remaining 2 Tbsp butter in the skillet.

  • Stir in garlic and cook for 30–60 seconds until fragrant.

  • Add Worcestershire sauce, Italian seasoning, smoked paprika, and any steak juices from the plate. Stir well and remove from heat.

4. Make the Creamy Parmesan Sauce

  • In a clean skillet (or wipe out the previous one), melt 2 Tbsp butter over medium-low heat.

  • Add cream and gently whisk, scraping up any browned bits for flavor.

  • Slowly add Parmesan cheese, stirring constantly until smooth and creamy.

  • If the sauce becomes too thick, add reserved pasta water a little at a time.

5. Combine & Serve

  • Toss cooked pasta shells into the Parmesan sauce until fully coated.

  • Gently fold in the steak bites with garlic butter.

  • Season to taste with salt and pepper.

  • Garnish with chopped parsley and extra Parmesan, if desired.

πŸ’‘ Tips for Best Results

  • Swap in ribeye or tenderloin for ultra-tender steak bites.

  • Avoid overcrowding the panβ€”sear in batches to get a proper crust.

  • Freshly grate Parmesan for the smoothest, non-grainy sauce.

  • Add a pinch of red pepper flakes to the butter for a subtle kick.
