Step 1: Prep & Sift

  1. Preheat your oven to 350°F (175°C). Grease two muffin tins well.

  2. In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, salt, and all the spices (cinnamon, cloves, nutmeg, allspice, ginger, and white pepper).

Step 2: Cream the Base

  1. In a large bowl, beat the softened butter and brown sugar together until light and fluffy.

  2. Add the eggs one at a time, mixing well after each addition.

  3. Stir in the molasses and buttermilk until the mixture is smooth and well combined.

Step 3: Combine Ingredients

  1. Gently fold the dry ingredients into the wet mixture, being careful not to overmix.

  2. Stir in the hot water and raisins. The batter will be thinner than standard muffin batter—this is normal for Sailor Jacks.

Step 4: Bake

  1. Spoon the batter into the prepared muffin tins, filling each cup just over halfway.

  2. Bake for 20–24 minutes, or until a toothpick inserted in the center comes out clean.

  1. While the cakes are baking, whisk together powdered sugar, vanilla, and water until smooth.

  2. Drizzle the icing over the warm muffins, or dip the tops for a thicker glaze.
