
German Potato Pancakes
Experience a delightful departure from the ordinary with these German potato pancakes. They transform into a satisfying dinner when paired with Bratwurst sausage. For a unique twist, I like to spread mine with cranberry sauce and drizzle them with maple syrup.
Ingredients:
2 large eggs
2 tablespoons all-purpose flour
¼ teaspoon baking powder
½ teaspoon salt
¼ teaspoon pepper
6 medium potatoes, peeled and shredded
½ cup finely chopped onion
¼ cup vegetable oil
Instructions:
In a large bowl, beat together eggs, flour, baking powder, salt, and pepper. Stir in shredded potatoes and chopped onion.
Heat vegetable oil in a large skillet over medium heat. Drop heaping tablespoonfuls of the potato mixture into the hot oil in batches. Press them to flatten. Cook until golden brown and crisp, approximately 3 minutes on each side.
Transfer the cooked pancakes to a paper towel-lined plate to drain. Repeat the process with the remaining potato mixture. Serve and enjoy!
