Instructions:
Step 1
Preheat your oven to 350°F (175°C). Grease a 9-by-5-inch loaf pan with cooking spray and dust with flour, tapping out any excess.
Step 2
In a medium bowl, whisk together 1/2 cup + 1 tablespoon flour, baking soda, and salt. Set aside.
Step 3
In a large bowl, whisk together yogurt, sugar, eggs, orange zest, vanilla extract, and vegetable oil until well combined.
Step 4
Gradually add the dry ingredients to the wet ingredients, whisking until just combined.
Step 5
In a separate bowl, toss the cranberries with the remaining tablespoon of flour to coat them evenly.
Step 6
Gently fold the cranberries into the batter.
Pour the batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Step 7
Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack set over a baking sheet to cool completely.
For the Orange Syrup:
Step 1
In a small saucepan, combine orange juice and sugar. Heat over medium heat, stirring until the sugar dissolves. Simmer for 3 minutes, then remove from heat and set aside.
Step 2
Once the bread has cooled, poke holes in the top and sides with a toothpick. Brush the warm orange syrup over the bread, allowing it to soak in. Repeat until all the syrup is absorbed.
For the Glaze:
Step 1
In a small bowl, whisk together confectioners’ sugar and 2-3 teaspoons of orange juice until smooth and pourable. If needed, add more orange juice to reach your desired consistency.
Step 2
Drizzle the glaze over the cooled bread, allowing it to drip down the sides. Let the glaze set for 15 minutes before slicing and serving.
