Instructions:
Step 1
Preheat your oven to 425°F (220°C).

In a large skillet over medium heat, add a drizzle of olive oil.

Cook the onions and bell peppers until soft, about 5 minutes. Transfer them to a small bowl and set aside.

In the same skillet, cook the ground beef until browned, breaking it up with a spoon as it cooks, for about 5 minutes.

Drain any excess fat. Stir in the paprika, chili powder, cumin, and season with salt and pepper to taste.

On a baking sheet, arrange 6 tortillas, overlapping them slightly, and cover the entire surface of the baking sheet.

Spread the cooked ground beef evenly over the tortillas, then top with the cooked pepper and onion mixture.
Step 8
Sprinkle the shredded cheese and sliced green onions over the beef mixture.
Step 9
Fold the tortillas towards the center, then place another tortilla in the center on top of all the fillings.
Step 10
Bake in the preheated oven until the tortillas begin to turn crispy, about 25-35 minutes.

Once baked, slice the quesadillas into rectangles and serve warm with sour cream and pico de gallo on top.
