Ingredients:
1 container of softened cream cheese (8 ounces).
1 cup of whipping cream, whipped until soft peaks form.
3/4 cup of granulated sugar.
1 can (20 ounces) pineapple chunks, well drained.
1 container (10 ounces) raspberries or strawberries, gently defrosted and diced.
1 can (11 ounces) mandarin oranges, drained.
1/2 cup of chopped pecans.
2 ripe bananas, sliced.
1/3 cup of maraschino cherries.
Juice of 1 lemon.
Instructions:
Step 1
In a large bowl, cream together the softened cream cheese and granulated sugar until well combined.
Step 2
Gently fold in the whipped cream until fully incorporated.
Step 3
Add the drained pineapple chunks, diced strawberries or raspberries, and mandarin oranges to the creamy mixture. Stir gently to combine all the fruits evenly.
Step 4
Sprinkle the chopped pecans and halved maraschino cherries evenly over the fruit mixture.
Step 5
In a small bowl, toss the sliced bananas with lemon juice to prevent browning. Gently fold the bananas into the salad mixture.
Step 6
Evenly spread the fruit salad mixture into a 9-by-13-inch baking dish.
Step 7
Place it in the freezer for at least four hours or until it becomes solid.
Step 8
Before serving, remove the frozen fruit salad from the freezer and let it rest for 10–15 minutes. Cut into squares and serve.
Tips and Variations:
For a lighter version, substitute lower-fat cream cheese and light whipped topping.
Toasted pecans can enhance the nutty flavor of the salad.
