Instructions:
Step 1
In a large bowl, combine the yeast, sugar, melted butter, and warm milk.

Let it rest for 5 to 10 minutes until foamy.

Mash the potatoes and mix them into the yeast mixture.

Gradually add the flour and salt to the mixture while stirring until a dough forms.

Transfer the dough to a floured surface and knead for 5 to 7 minutes until elastic and smooth.

Coat a bowl with grease and transfer the dough into it. Allow it to rise in a warm spot for 1 to 2 hours, or until it has doubled in size.

Cover with a kitchen towel or plastic wrap if necessary.

Gently deflate the dough and portion it into uniform sizes.

Roll each portion into small balls and place them spaced apart on a prepared baking dish.

Cover the rolls and let them rise for another 30 to 45 minutes, until doubled in size.

Preheat the oven to 375°F (190°C).

Beat the egg and brush it over the tops of the rolls.

Place the rolls in the preheated oven and bake for about 15 to 20 minutes, or until golden brown.
