Rediscovered Family Recipe: Classic Eclairs

Instructions:

Step 1

Preheat your oven to 425°F (220°C). Prepare a baking sheet lined with parchment paper.

Step 2

In a medium saucepan, bring water, butter, sugar, and salt to a boil.

Step 3

Once boiling, add flour and stir vigorously until the mixture forms a ball. Remove from heat and let it cool slightly.

Step 4

Gradually beat in the eggs, one at a time, until the dough becomes smooth and glossy.

Step 5

Using a piping bag fitted with a large plain tip, pipe the dough onto the prepared baking sheet into 4-inch-long strips.

Step 6

Bake in the preheated oven for 15 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 25 minutes, or until golden brown and puffy.

Step 7

Remove from oven and poke a small hole in the top of each eclair to release steam. Allow them to cool completely on a wire rack.

Step 8

In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Step 9

Fill a clean piping bag with the whipped cream and pipe into the cooled eclairs.

Step 10

For the chocolate glaze, heat 1/4 cup of heavy cream in a small saucepan until it begins to simmer. Remove from heat and whisk in the chocolate chips until smooth.

Step 11

Dip the tops of each eclair into the chocolate glaze and allow them to set before serving.

Tips and Variations:

Add a hint of mocha flavor to the chocolate glaze by mixing in a teaspoon of espresso powder.

Experiment with different extracts like almond or orange for unique cream filling flavors.

For added texture, sprinkle chopped nuts or toffee pieces over the glaze before it sets.

Enjoy your homemade Classic Eclairs and create lasting memories with loved ones!
