Instructions:
Step 1
Preheat your oven to 350°F (175°C). Grease a loaf pan and set aside.
In a medium-sized bowl, sift together the flour, salt, and baking powder. Set aside.

In a separate bowl, cream together the softened butter and granulated sugar until smooth.

Add eggs to the butter-sugar mixture, one at a time, mixing well after each addition.

Alternately add the reserved 1/4 cup of pineapple juice and the dry ingredients to the butter-sugar mixture, mixing until smooth after each addition.

Stir in the milk until fully incorporated, then gently fold in the drained crushed pineapple.

Pour the batter into the greased loaf pan, spreading it out evenly.
Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.

Allow the loaf to cool in the pan for 10-15 minutes, then transfer it to a wire rack to cool completely.

In a small bowl, whisk together the reserved pineapple juice, confectioners’ sugar, and vanilla extract until smooth.

Once the loaf has cooled completely, brush the glaze over the top.

Allow the glaze to set before slicing and serving.
