Instructions:
Step 1
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with cooking spray or line it with parchment paper.
Step 2
In a large mixing bowl, combine the cake mix, pudding mix, eggs, oil, milk, crushed pineapple (with juice), and sugar.
Step 3
Mix until the batter is smooth and well combined.
Step 4
Pour the cake batter into the prepared baking pan, spreading it evenly.
Step 5
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Once done, remove the cake from the oven and let it cool completely in the pan on a wire rack.
Step 6
In a separate bowl, beat the softened cream cheese and butter together until smooth and creamy.
Step 7
Gradually add the confectioner’s sugar, continuing to beat until the mixture is light and fluffy. If using, add the vanilla extract and mix well.
Step 8
Once the cake has cooled completely, spread an even layer of frosting over the top. If desired, sprinkle chopped pecans over the frosting.
Step 9
Cut the cake into squares and serve. Store any leftovers in the refrigerator.
