Ingredients:
1 pound sirloin steak
1 tsp. chili powder
½ tsp. red pepper
¼ tsp. cumin
¼ tsp. marjoram
¼ tsp. garlic powder
¼ tsp. onion powder
¼ tsp. salt
4 large tortillas
2 tbsp. taco shredded cheese mix
½ cup cherry tomatoes, sliced
½ cup fire-roasted dried corn
1/2 cup black beans, rinsed and drained
1 avocado, cut into cubes
Lemon juice and chopped coriander for garnish
Method:
Preheat the oven to 425 degrees.
In a small bowl, combine chili powder, paprika, cumin, oregano, garlic powder, onion powder, and salt.
Season the steak with the spice mixture.
Heat some oil in a frying pan over medium heat and cook the steaks until they are cooked to your liking. Let rest, then cut into pieces.
Place 2 large tortillas on a lined baking sheet, and top with 1/2 cup of cheese.
Spread the steak evenly over the tortillas.
Top the tortillas with beans, corn, tomatoes, and avocado.
Garnish with lemon juice and chopped coriander.
