Drain any excess fat.

Add the beef broth, chicken broth, and diced tomatoes.

Bring the mixture to a simmer and cook for 15 minutes, or until the peppers start to soften.

Stir in the rice, ensuring it is well-coated with the liquid. Cover and cook for 5-7 minutes, or until the rice is tender.

Serve immediately, seasoning with kosher salt and freshly ground black pepper to taste.
