Spinach Stuffed Pastry
These Spinach Stuffed Pastries are a delightful treat, perfect as an appetizer, light lunch, or savory snack.
Ingredients:
2 sheets of thawed puff pastry
2 cups of chopped, fresh spinach
1/2 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 beaten egg (for egg wash)
1 teaspoon garlic powder
Salt and pepper to taste
1 tablespoon olive oil
Instructions:
Prepare the Oven:
Preheat the oven to 400°F (200°C).
Line a baking sheet with parchment paper.
Prepare the Filling:
Heat the olive oil in a large skillet over medium heat.
Add the chopped spinach and cook for 2-3 minutes until wilted.
Remove from heat and let cool slightly.
In a medium bowl, mix the cooked spinach, ricotta, Parmesan, garlic powder, salt, and pepper until well combined.
