Instructions:
Prepare the Filling:

Stir in the peanut butter and honey until well mixed.
Form the Treats:
Scoop a tablespoon of the mixture and press it into small balls or mound it into mini cupcake liners. Set aside.
Make the Chocolate Coating:
In a microwave-safe bowl, combine the milk chocolate chips and coconut oil.
Heat in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth.
Stir in the vanilla extract.
Coat the Treats:
Dip each nut mixture ball into the melted chocolate, coating it completely.
Place the chocolate-covered treats back into the paper liners.
Chill and Set:
Refrigerate for about 30 minutes, or until the chocolate has set.
