Instructions:

Step 1

Set your oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, baking powder, salt, and sugar (if using).

Add the cold butter to the flour mixture.

Use a pastry cutter or your fingers to mix until the texture resembles coarse crumbs.

Pour in the milk or buttermilk. Stir until the dough just comes together, being careful not to overmix.

The dough should be slightly sticky.

Lightly flour a surface and turn the dough out.

Gently knead it a few times, then pat it to about 1/2 inch thickness.

Place them on the prepared baking sheet with space in between.
