Instructions:

Step 1

Peel and grate the potatoes.

Step 2

Soak the grated potatoes in 2 cups of fresh water for 10-15 minutes, then drain and pat dry.

Step 3

In a large bowl, combine the grated potatoes, parsley, mashed green onions, cornstarch, salt, and black pepper.

Step 4

Mix well to evenly distribute the ingredients.

Step 5

Spread the potato mixture on a flat surface, pressing it to about ¼ inch thick.

Step 6

Cut into small squares.

Step 7

Heat the oil in a pan to 350°F (175°C).

Step 8

Fry the squares in small batches for 2-3 minutes on each side, or until they are golden and crispy.

Step 9

Remove the potato squares and place them on paper towels to absorb excess oil.

Step 10

Serve hot as a snack or side dish.

Pro Tips:

Dry the potatoes well after soaking to ensure a crispy texture.

Don’t overcrowd the pan when frying—cook in small batches for even crispiness.

Season immediately after frying while the squares are still hot to help the spices stick.

Use a thermometer to keep the oil at 350°F (175°C) for perfect frying results.

Experiment with flavors by adding garlic powder, paprika, or grated cheese to the mix!
