Instructions:
Step 1
Preheat the Oven: Set the oven to 325°F (163°C).

Mix Wet Ingredients: In a large bowl, whisk together the oil, sugar, and eggs until smooth and slightly thickened.

Prepare Dry Ingredients: In another bowl, sift together the flour, baking soda, cinnamon, and salt.

Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

Add Apples and Pecans: Gently fold in the chopped apples and pecans until evenly distributed.

Prepare the Pan: Grease and flour a tube pan or two loaf pans. Pour the batter evenly into the prepared pan(s).

Bake: Bake for about 1 hour. Start checking around 50 minutes by inserting a toothpick into the center. If it comes out clean or with a few crumbs, the cake is ready.
For the Caramel Glaze:
In a saucepan, melt the butter and stir in the brown sugar and milk.
Bring the mixture to a boil and let it simmer for 2 minutes.
Remove from heat and stir in the vanilla.
Drizzle the glaze over the cooled cake before serving.
