Directions:

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, mix together the ground beef, onion, garlic, breadcrumbs, ketchup, Worcestershire sauce, thyme, salt, and pepper.
  3. Layer half of the sliced potatoes in the bottom of the greased dish. Shape the meat mixture into a loaf and place it on top of the potatoes. Cover the meatloaf with the remaining potato slices.
  4. Cover with foil and bake for 45 minutes. Remove the foil, sprinkle grated cheddar cheese on top, and bake for another 15-20 minutes until the potatoes are tender and the cheese is melted.
  5. Let cool slightly, garnish with parsley if desired, and serve.
