Delicious Cabbage Roll Soup

Cabbage Roll Soup is a comforting and hearty dish inspired by traditional cabbage rolls, but without all the extra work of rolling each leaf. If you love the flavors of tender cabbage, seasoned ground meat, and rich tomato sauce, but are short on time, this soup is the perfect solution. It combines all the classic ingredients of a cabbage roll—ground beef or pork, cabbage, carrots, tomatoes, and rice—into one easy-to-make pot of goodness.

The beauty of this recipe is its simplicity. Everything simmers together in one pot, creating layers of flavor with minimal effort. The addition of beef broth makes the soup rich and filling, while the spices—like paprika, thyme, and Worcestershire sauce—give it a deep, savory taste that’s irresistible. The rice cooks directly in the soup, soaking up all those delicious juices and making each spoonful even more satisfying.

Not only is Cabbage Roll Soup a great weeknight dinner option, but it also makes excellent leftovers. It’s one of those dishes that tastes even better the next day, as the flavors have more time to meld together. You can serve it with a side of crusty bread to soak up the broth, or simply enjoy it on its own for a wholesome, satisfying meal.

Ingredients:

  • 1 lb (450g) ground beef, pork, or a mix
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4-5 cups cabbage (from 1 small head), chopped
  • 2 medium carrots, peeled and sliced
  • 1 can (14 oz / 400g) diced tomatoes with juice

  • 1/2 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Brown the Meat:
Heat olive oil in a large pot over medium heat. Add ground meat and cook until browned. Drain any excess fat.
  2. Cook the Vegetables:
Stir in the onion and garlic, cooking for about 5 minutes until the onion is soft. Add the cabbage and carrots, cooking for another 5 minutes until the cabbage starts to soften.
  3. Add Liquids & Seasonings:
Pour in diced tomatoes, tomato sauce, and beef broth. Stir in rice, Worcestershire sauce, paprika, thyme, and bay leaf. Season with salt and pepper.
  4. Simmer the Soup:
Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, until the vegetables and rice are tender.
