Ingredients:
4 slices smoked bacon.
1 lb lean ground beef.
4 tbsp butter.
1 medium onion, chopped.
2 stalks celery, chopped.
2 carrots, grated.
2 Yukon Gold potatoes, diced.
⅓ tsp dried thyme.
½ tsp onion powder.
½ tsp dried basil.
1 tsp dried oregano.
1½ tsp dried parsley.
2 garlic cloves, minced.
3 tbsp flour.
3 cups chicken broth.
2 cups whole milk.
2 cups shredded cheddar cheese.
Salt and pepper to taste.
Instructions:
Step 1
In a large stockpot or Dutch oven, cook the bacon over medium heat until crispy.
Step 2
Remove the bacon and let it drain on paper towels.
Step 3
In the same pot, add the ground beef to the bacon drippings. Break it up as it cooks until browned.

Drain any excess fat and set the beef aside with the bacon.

In the pot, melt the butter over medium-low heat. Add the grated carrots and diced potatoes, cooking for about 5 minutes until they start to soften.

Sprinkle the flour over the vegetable mixture and stir to combine. Cook for about 2 minutes, stirring frequently.

Gradually add the chicken broth and then the milk, alternating between the two. Stir until well combined and bring to a simmer.
