1. Preheat the Oven
Set the oven to 325°F (163°C) for even baking and a perfect rise.
2. Mix the Wet Ingredients
In a large bowl, whisk together oil, sugar, and eggs until smooth and slightly thickened. This will create a light, airy base.
3. Prepare the Dry Ingredients
In another bowl, sift together flour, baking soda, cinnamon, and sea salt. Sifting ensures a lump-free, evenly textured cake.
4. Combine Wet and Dry Mixtures
Gradually fold the dry ingredients into the wet, stirring gently until just combined. Add the vanilla extract. Avoid overmixing to keep the cake tender.
5. Fold in Apples and Pecans

6. Prepare the Pan
Grease and flour a tube pan or two loaf pans. Pour in the batter, spreading it evenly.
7. Bake
Bake for about 1 hour, starting to check at 50 minutes with a toothpick. If it comes out clean or with a few crumbs, it’s done. Loaf pans may bake a little faster, so keep an eye on them.
