Turn the dough out and form it into two discs (about 4–5 inches wide). Wrap each in plastic wrap and refrigerate for at least 1 hour, or overnight.

Roll out one disc of dough on a floured surface and fit it into a pie dish.

In a mixing bowl, whisk together the eggs, cream, milk, salt, and pepper.
