Instructions

Preheat the Oven
Set your oven to 325°F (160°C). Prepare a large glass or ceramic baking dish and a larger pan for a water bath. -
Whisk the Custard
In a large bowl, whisk together eggs, sugar, vanilla, and salt until smooth and slightly frothy. -
Heat the Milk
Gently warm the milk in a saucepan over medium heat until just below boiling. Remove from heat. -
Temper the Eggs
Slowly pour the hot milk into the egg mixture, whisking constantly to prevent curdling. This ensures a silky-smooth custard. -
Strain for Smoothness
Strain the mixture through a fine-mesh sieve into the baking dish to remove any foam or cooked bits of egg. -
