Baked Custard Pudding

Ingredients

  • 4 cups whole milk

  • 6 large eggs

  • 1 cup granulated sugar

  • 2 teaspoons vanilla extract

  • ¼ teaspoon salt

  • Ground nutmeg or cinnamon, for topping

Instructions

  1. Preheat the Oven
    Set your oven to 325°F (160°C). Prepare a large glass or ceramic baking dish and a larger pan for a water bath.

  2. Whisk the Custard
    In a large bowl, whisk together eggs, sugar, vanilla, and salt until smooth and slightly frothy.

  3. Heat the Milk
    Gently warm the milk in a saucepan over medium heat until just below boiling. Remove from heat.

  4. Temper the Eggs
    Slowly pour the hot milk into the egg mixture, whisking constantly to prevent curdling. This ensures a silky-smooth custard.

  5. Strain for Smoothness
    Strain the mixture through a fine-mesh sieve into the baking dish to remove any foam or cooked bits of egg.

  6. Add Spice
    Lightly sprinkle ground nutmeg or cinnamon over the top for a warm, aromatic touch.
