Option 1: Crispy Mashed Potato Patties

In a large bowl, combine the mashed potatoes, flour, eggs, sour cream, Parmesan, herbs, salt, and pepper. Mix until a thick, cohesive mixture forms.

Heat oil or butter in a skillet over medium heat.

Scoop about ¼ cup of the mixture, shape into patties, and gently flatten.

Fry for 3–4 minutes per side, until golden brown and crispy.
