Cheesy Pork Chop Casserole Recipe

 

Ingredients:

6 pork chops

8 potato slices

1 sliced onion

6 tbsp butter

7 tbsp extra virgin olive oil

3 cups chicken stock

2 1/2 cups grated cheddar cheese

2 cups milk

2/3 cup all-purpose flour

1/4 cup chopped chives

Salt, pepper, and 1 tsp granulated garlic (to taste)

Instructions:

Preheat the oven to 350°F. Soak potato slices in cold water to remove starch (can be done a few hours ahead).

In a skillet, melt 4 tbsp butter and 4 tbsp olive oil over medium-high heat. Add onions and cook until caramelized. Sprinkle flour over onions.

Add chicken stock and milk, stirring until it thickens. Season, then stir in cheese and chives. Remove from heat once the cheese melts.
Grease a casserole dish. Drain potatoes and layer them, followed by the cheese sauce. Repeat.

Bake for 20 minutes.

For the pork chops: Mix flour, garlic, salt, and pepper. Coat each pork chop. In a skillet, heat 2 tbsp butter and 3 tbsp olive oil over medium-high heat. Brown the pork chops (4-5 mins/side).

Place pork chops over the potatoes and bake for 40 minutes until bubbly and golden.

Optional: Garnish with extra chives.
