1 head of cauliflower.
Pinch of sea salt.
60g butter.
60g flour.
1/2 cup milk (plus extra for the sauce).
60ml double cream.
A pinch of nutmeg.
200g cheddar cheese (or your preferred cheese).
Freshly ground black pepper.
Instructions:
Step 1
Remove the outer leaves from the cauliflower head.

Cut the cauliflower into florets by slicing around the stem. Try to keep the florets similar in size for even cooking.
