Instructions:
Step 1
Rinse the tapioca pearls and place them in a small bowl. Cover them with water and let them soak for 45-60 minutes.

In a large saucepan, combine the milk and the first ¾ cup of sugar. Bring the mixture to a simmer over medium heat.

Once small bubbles form, add the soaked tapioca pearls and reduce the heat to a gentle simmer.

Stir frequently and cook for an additional 15-20 minutes, or until the pearls become translucent.

While the pearls are cooking, beat together the eggs and the remaining ¾ cup of sugar in a medium-sized bowl.

Slowly pour a stream of the hot milk mixture into the eggs, about ⅓ cup at a time, while stirring constantly.

Continue until half of the hot mixture has been incorporated into the eggs.

Gradually pour the egg mixture back into the saucepan, stirring continuously.

Cook for an additional 3-5 minutes, or until the pudding starts to thicken (it will continue to thicken as it cools).
Step 10
Remove the saucepan from the heat and stir in the vanilla extract.
Transfer the pudding to serving dishes and chill until ready to serve.
