Classic New York Cheesecake 🍰

Ingredients

For the Crust:

  • 1½ cups (150g) graham cracker crumbs

  • ¼ cup (50g) granulated sugar

  • ⅓ cup (75g) unsalted butter, melted

For the Filling:

  • 4 (8 oz) packages cream cheese, softened (900g total)

  • 1¼ cups (250g) granulated sugar

  • 1 cup (240g) sour cream

  • 1 teaspoon vanilla extract

  • 4 large eggs, at room temperature

Instructions

1. Prepare the Crust

  1. Preheat your oven to 325°F (160°C).

  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl until fully mixed.

  3. Press the mixture firmly into the bottom of a 9-inch (23 cm) springform pan.

  4. Bake for 10 minutes, then set aside to cool while preparing the filling.

2. Make the Filling

  1. In a large bowl, beat the cream cheese and sugar until smooth and creamy—no lumps!

  2. Blend in the sour cream and vanilla extract until fully incorporated.

  3. Add the eggs one at a time, mixing gently on low speed. Be careful not to overmix to prevent cracks.
