What Is Chipped Beef?
Chipped beef is thinly sliced, salted, and dried beef. Historically, it was a reliable protein source for travelers on the Overland Trail during the mid-1800s.
Also known as dried beef, it’s commonly made from lean cuts like beef round. The meat is brined, cured for several days, then drained and air-dried. Some varieties are smoked during drying, adding a smoky depth of flavor.
