Creamy Baked Broccoli with Tomatoes and Kale

 

Instructions:

Step 1

Set your oven to 400°F (200°C).

Toss broccoli florets with olive oil and spread them on a baking sheet.

In a pan, heat olive oil and sauté onion until soft.

Add garlic and cook for 1 minute.

Add tomatoes and kale, and cook until tomatoes soften and kale wilts.

Push vegetables to one side, melt butter in the pan.

Step 7

Stir in flour, then gradually add cream, stirring until thickened.

Step 8

Season with thyme and salt.

Step 9

Mix broccoli with the sauce.

Step 10

Transfer to a baking dish, top with mozzarella cheese.

Bake for 20-25 minutes until cheese is melted and golden.
