Prepare the Vegetables:
Grate the zucchini and carrots. Squeeze out excess water from the zucchini using a clean cloth. Chop the green onions finely.
Mix the Ingredients:
In a large bowl, combine the grated zucchini, carrots, green onions, shredded cheese, and flour. In a separate bowl, whisk the eggs and then add them to the vegetable mixture.
Add salt, black pepper, garlic powder, and paprika. Mix everything well until fully combined.
Form the Rolls:
Take a small amount of the mixture and shape it into a small log or roll with your hands. Repeat with the remaining mixture.
Fry the Rolls:
Heat the vegetable oil in a large skillet over medium heat. Place the rolls in the skillet and cook for about 3-4 minutes on each side, until they are golden and crispy.
