CROCKPOT COWBOY SOUP

 

Ingredients:

2 pounds ground beef

2 packages (16 ounces) kielbasa sausage, sliced into 1/2-inch pieces

2 cloves garlic, minced

1 onion, chopped

2 cans (14.5 ounces each) peeled and diced tomatoes, drained

4 medium baked potatoes, peeled and diced

2 cans (15 ounces each) pinto beans, undrained

2 cans (15.2 ounces each) whole kernel corn, undrained

1 can (14.5 ounces) diced tomatoes with green chiles, undrained

1 package (10 ounces) frozen mixed vegetables

4 cups water

2 teaspoons ground cumin

2 teaspoons chili powder

Salt and pepper to taste

Instructions:

In a large skillet over medium-high heat, crumble the ground beef. Add the sliced sausage, minced garlic, and chopped onion. Cook and stir until the meat is no longer pink. Drain excess fat and transfer the mixture to a large saucepan.

Add the drained diced tomatoes to the saucepan, then stir in the diced potatoes, undrained pinto beans, undrained corn, diced tomatoes with green chiles, mixed vegetables, and water. Season with ground cumin, chili powder, salt, and pepper.

Cover the saucepan and simmer over medium-low heat for at least 1 hour, stirring occasionally. The longer the stew cooks, the more flavorful it becomes.
