Evenly distribute chopped pecans on top of the parchment paper.

In a sturdy 3-quart saucepan, combine Challenge Butter, granulated sugar, and kosher salt.

Over medium-low heat, bring the mixture to a boil, swirling often to dissolve the sugar completely.

Use a candy thermometer to monitor the temperature, aiming for 290–300 degrees Fahrenheit, or the “hard crack” stage.

Once the candy reaches the desired temperature, remove it from heat and slowly mix in the vanilla extract.

Carefully pour the mixture over the chopped pecans in the prepared baking dish, ensuring even coverage.
