Ingredients:
Enough apples, peeled and sliced, to cover the bottom of an 8-inch pie plate
Topping:
2 eggs
1 cup sugar (set aside 1/4 cup and add 1 teaspoon cinnamon to it)
2 tablespoons melted butter or margarine
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon vanilla
Preparation:
Combine all topping ingredients except the reserved cinnamon sugar. Sprinkle the cinnamon sugar over the apples, then pour the topping over the entire mixture.
Bake in a 350-degree oven for 40-45 minutes or until the topping is firm and golden brown.
