INGREDIENTS NEEDED FOR THE CHEESECAKE:

3 bricks.Of cream cheese; softened to room temp.

⅓ Cup.Of granulated sugar.

⅓ Cup.Of brown sugar.

⅔ Cup.Of heavy cream; at room temp.

¼ Cup.Of sour cream; at room temp.

1 Tsp.Of kosher salt.

2 large eggs at room temp.

An egg yolk.

2 Tbsp.Of cornstarch.

1 Tbsp.Of lime juice.

INGREDIENTS NEEDED FOR THE TOPPING:

2 Cups.Of crushed graham crackers.

¼ Cup.Of brown sugar.

9 Tbsp.Of unsalted butter.

PREPARATION:

1st Step

First; you need to bring the temp in the oven up to 350 degrees, and line the bottom of your springform pan measuring 9 inches with parchment paper. Spray the sides of the pan with nonstick spray while using a light hand.

2nd Step

In a medium bowl, combine the crushed graham crackers and brown sugar to begin making the crust.

3rd Step

After mixing in the butter that has been melted, the mixture should look like wet sand. Maintaining a uniform layer, the crust mixture should be pressed into the base of the springform pan.

4th Step

Put the crust in the oven and bake it for ten minutes at 350 degrees. When the crust has been cooked, take it out of the oven and lay it on a cooling rack so that it may cool down while you prepare the cheesecake mixture. Raise the temperature in the oven to 400 degrees.

5th Step

Put the cream cheese, sugar, and brown sugar into the paddle attachment-fitted bowl of a stand mixer. Combine, then beat at high speed for two minutes to ensure that there are no lumps left in the mixture and that it is smooth.

6th Step

After adding the heavy cream, sour cream, salt, and vanilla beat the mixture for thirty to forty-five seconds, or until all of the ingredients are completely mixed.

7th Step

Add the egg and egg yolk and beat until incorporated. Last but not least, mix the lime juice and cornstarch by beating them together.

8th Step

Spread the cheesecake batter evenly on the bottom of the springform pan after pouring it in.

9th Step

In a medium bowl, combine the crumbled graham crackers and brown sugar to form the topping. After incorporating the butter, continue to combine the ingredients until they have the consistency of wet sand. Place an even layer of the topping on top of the cheesecake batter using a spoon.

10th Step

Cover the bottom and sides of the springform pan with aluminum foil to prevent water from penetrating.

11th Step

To make a water bath for the springform pan, place it inside a large baking pan or broiler pan and fill it with enough hot water to reach about an inch up the sides of the springform pan. Bake the cake in the water bath.

12th Step

Put the tins into an oven that has been prepared to bake them for 15 minutes. Turn the heat down to 250 degrees. Bake for exactly one hour.
