Step 1
Set up your workspace by lining a large baking sheet with parchment paper. This will be your spot for rolling the balls and dipping them in chocolate.

In a mixing bowl, beat together the softened butter and peanut butter until smooth and creamy, about 2-3 minutes using a hand or stand mixer. Add the vanilla extract and continue mixing until combined.

Slowly mix in the powdered sugar, one cup at a time, until the dough comes together and is no longer sticky. The mixture should resemble a firm cookie dough.

Scoop out tablespoon-sized portions of the dough and roll them into smooth balls using your hands. Place them on the parchment-lined baking sheet, leaving a little space between each ball.

Transfer the baking sheet to the refrigerator and chill the balls for 30-60 minutes. This ensures they hold their shape when dipped in chocolate.
Step 6
While the peanut butter balls chill, melt your chocolate chips. You can use a microwave, heating in 30-second intervals and stirring, or melt over a double boiler on the stovetop.
Step 7
Once the peanut butter balls are firm, carefully dip each one into the melted chocolate using a fork or candy-dipping tool. Let excess chocolate drip off before placing the dipped balls back on the baking sheet.
Step 8
After all the balls are coated in chocolate, return them to the refrigerator for another 15-20 minutes to let the chocolate harden and set.
