Easy Reuben Bake

How to Make It

  1. Preheat Oven
Heat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

  2. Bottom Crust
Press one can of crescent dough evenly into the dish, sealing all seams.

  3. Layer the Filling

    • Spread half the Thousand Island dressing.

    • Add the corned beef.

    • Evenly spread the sauerkraut.

    • Top with Swiss cheese.

    • Spread the remaining dressing.

  4. Top Crust
Place the second can of dough over the filling and seal the edges.

  5. Bake
Brush with melted butter and sprinkle with poppy seeds if using.
Bake for 25–30 minutes, until golden and bubbling.

  6. Serve
Let rest for a few minutes, then cut into squares and serve warm.

Helpful Tips

  • Make sure the sauerkraut is well-drained to avoid a soggy bake.

  • Swap corned beef for pastrami, turkey, or roast beef.

  • Add a pinch of caraway seeds for that classic deli flavor.

Storage

  • Refrigerate: Store leftovers in an airtight container for up to 3 days.

  • Reheat: Warm in a 350°F (175°C) oven or heat briefly in the microwave.
