Instructions:
Peel the bananas and place them in a mixing bowl. Using a fork or potato masher, mash the bananas until smooth.
Crack the eggs into the bowl with the mashed bananas. Add vanilla extract and cinnamon (if using).
Mix everything together until well combined. You can use a whisk or a fork for this step.
Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.
Once the skillet is hot, pour a small amount of the pancake batter onto the skillet to form pancakes of your desired size. Use about 1/4 cup of batter for each pancake.
Cook the pancakes for 2-3 minutes on one side, or until bubbles start to form on the surface.
Carefully flip the pancakes with a spatula and cook for an additional 1-2 minutes on the other side, or until golden brown and cooked through.
Remove the pancakes from the skillet and repeat the process with the remaining batter, adding more butter or oil to the skillet as needed.
Serve the pancakes warm with your favorite toppings, such as berries, sliced bananas, maple syrup, honey, or nuts.
Enjoy your fluffy and flavorful flourless pancakes!
Note: These pancakes are naturally sweetened by the bananas, but feel free to adjust the sweetness according to your preference by adding a drizzle of maple syrup or honey on top. You can also customize the flavor by adding extras like chocolate chips or chopped nuts to the batter before cooking.
