Fresh Southern Peach Cobbler

 

Instructions:

Step 1

Preheat oven to 425°F.

In a large bowl, combine the peaches, lemon juice, 1/2 cup sugar, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, cornstarch, and 1/2 teaspoon salt.

Mix well and transfer to a 9×13-inch baking dish.

Bake for 10 minutes. While the peach filling bakes, prepare the topping.

In a mixing bowl, whisk together the flour, 1 cup sugar, baking powder, and salt.

Add the grated butter and mix to combine.

Quickly stir in the boiling water just until combined. The batter will be lumpy.

Remove the baking dish from the oven and drop the topping over the filling in large spoonfuls.

Step 9

Mix the cinnamon and sugar for the topping and sprinkle over the cobbler.

Bake until the top is golden brown and the filling is bubbly, 25-30 minutes.

Serve with vanilla ice cream and enjoy!
