Fried Potatoes, Onions, and Smoked Polish Sausage

 

Instructions:

Step 1

In a large pan, heat a spoonful of butter over medium heat. Add the diced onion and saute until translucent and soft.

Step 2

Remove the onion from the pan and set aside.

Step 3

In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil until the butter melts.

Step 4

Add the diced potatoes, seasoned salt, Italian seasoning, and black pepper.

Step 5

Cover and cook, stirring occasionally, for about 15 minutes, or until the potatoes are slightly softened.

Step 6

Add the sliced smoked sausage to the skillet with the potatoes.

Step 7

Cook for an additional 10 minutes.

Step 8

In the same skillet, add the sauteed onion, red bell pepper, and green bell pepper.

Step 9

Sauté until the peppers are tender-crisp.

Step 10

If desired, sprinkle shredded parmesan cheese on top before serving.

Cooking Note:

If you prefer a crisper sausage, cook the sausage separately in a pan over medium-high heat until crisp, and then add it to the potatoes.
