π³ Instructions
1. Cook the Pasta
-
Bring a pot of salted water to a boil and cook pasta until al dente.
-
Reserve 1/4 to 1/2 cup of pasta water, then drain and set aside.
2. Sear the Steak
-
Pat steak dry and season with salt and pepper.
-
Heat 1 Tbsp olive oil and 1 Tbsp butter in a large skillet over high heat.
-
Add steak in a single layer (cook in batches if needed).
-
Sear for 2β3 minutes per side for medium-rare. Remove and set aside.
3. Make the Garlic Herb Butter
-
Lower heat to medium. Melt the remaining 2 Tbsp butter in the skillet.
-
Stir in garlic and cook for 30β60 seconds until fragrant.
-
Add Worcestershire sauce, Italian seasoning, smoked paprika, and any steak juices from the plate. Stir well and remove from heat.
4. Make the Creamy Parmesan Sauce
-
In a clean skillet (or wipe out the previous one), melt 2 Tbsp butter over medium-low heat.
-
Add cream and gently whisk, scraping up any browned bits for flavor.
-
Slowly add Parmesan cheese, stirring constantly until smooth and creamy.
-
If the sauce becomes too thick, add reserved pasta water a little at a time.
5. Combine & Serve
-
Toss cooked pasta shells into the Parmesan sauce until fully coated.
-
Gently fold in the steak bites with garlic butter.
-
Season to taste with salt and pepper.
-
Garnish with chopped parsley and extra Parmesan, if desired.
