Line a saucepan or bowl with cheesecloth and pour the mixture through it, letting the whey drain into the pan while keeping the curds.

Gently twist the cheesecloth to remove excess whey, then refrigerate the wrapped curds for at least 30 minutes.

Season the curds with salt if desired, then transfer them to a mold of your choice.
Step 8
Finally, refrigerate the mold for another 8 hours to set the cheese.
