Ingredients:
1-1/2 pounds ground beef
Salt, to taste (approximately 1/4 teaspoon)
Pepper, to taste (approximately 1/4 teaspoon)
3 teaspoons olive oil
2 cups green or red peppers, roughly chopped (or 1 cup of each)
1 small can mild or hot RoTel diced tomatoes with chopped peppers, drained
1 cup onion, roughly chopped
4 whole pita breads, warmed and softened in the microwave
Optional: 1/2 cup sour cream mixed with 1/4 cup blue cheese
crumbles
4 sheets of aluminum foil (12×12 inches)
Instructions:
Cook the ground beef until it is no longer pink. Add olive oil, peppers, and onions to the ground beef. Sauté until the onions are translucent, and the peppers are softened.
Add the drained RoTel tomatoes and peppers. Combine and heat through. Adjust salt and pepper to taste.
Dampen a few paper towels with water, wrap the pita bread in them, and warm them in the microwave until they become pliable.
Place one pita bread on a sheet of aluminum foil and add approximately 1/4 of the ground beef, onions, peppers, and tomatoes mixture.
Roll the aluminum foil and pita bread gyro-style. Optionally, add sour cream and blue cheese as a garnish.
Repeat the process with the remaining three pita breads.
