Instructions:

In a medium saucepan, combine the tapioca pearls and milk. Let it sit for 30 minutes to allow the pearls to soften.

After soaking, stir in the sugar, egg yolks, and salt.

Place the saucepan over medium heat and cook the mixture, stirring constantly, until it comes to a gentle boil.

Reduce the heat to low and continue to cook, stirring constantly, for about 10-15 minutes or until the pudding thickens.

In a separate bowl, beat the egg whites until stiff peaks form.

Step 6

Remove the saucepan from the heat and gently fold in the beaten egg whites and vanilla extract until well combined.

Step 7

Let the pudding cool slightly before serving, or refrigerate for a few hours for a chilled pudding.

Step 8

Serve the tapioca pudding plain or with your favorite toppings, such as fresh fruit or a sprinkle of cinnamon.
