I made a delicious stirfry with the leftover Christmas cocktail shrimp and vegetable tray. You can use any veggies but the sauce i developed I am very happy with.
- All ingredients to taste:

Cook shrimp first, or substitute chicken, beef, etc. put on side. Sauté veggies in veggie oil or peanut oil at medium heat. I like mine crisp so I start building my sauce into the dish slightly before veggies are ready, and add the meat back in at that point before a final season to taste. Enjoy! For those interested, this time I used carrots, broccoli, cauliflower, yellow squash, snow peas, bok choi, mushrooms. There are a lot of ways to modify this dish and suit your taste. Keep in mind, if you plan to mix with rice, add all flavorings heavier so you don’t drown out the flavor.
