Ingredients:
4 large potatoes, peeled and diced.
2 cups water.
3 large carrots, peeled and thinly sliced.
1 large onion, finely diced.
Salt and pepper, to taste.
4 cups chopped green beans (fresh or frozen).
4 cups tomatoes.
1/2 pound ground beef, cooked and drained.
4 cups corn kernels (fresh or frozen).
1/2 teaspoon Italian seasoning.
1/2 teaspoon curry powder.
2 bay leaves.
Instructions:
Step 1
In a large pot, combine potatoes, carrots, water, onion, salt, and pepper. Bring to a boil over medium heat.
Step 2
Reduce heat to low, cover, and simmer for about 25 minutes or until the vegetables are tender.
Step 3
Add in green beans, tomatoes, cooked ground beef, corn kernels, Italian seasoning, curry powder, and bay leaves.
Step 4
Cover again and continue to simmer, stirring occasionally, for an additional 30 minutes or until all ingredients are thoroughly cooked.
Step 5
Prior to serving, don’t forget to remove the bay leaves for a seamless dining experience.
